Greenport Jerky Heads Toward New Season

The Greenport Jerky Company, which has been “jerking since 2016,” according to owners Vinny and Carolyn Macchirole, has enjoyed a successful first year and is poised to expand to retail outlets on the South Fork.

Already carried in places like Greenport Fire, Fork & Anchor in East Marion and the North Fork Roasting Company in Southold, the Macchiroles say they needed to see how their first year went before deciding to expand.

“We didn’t know how the thing were going to start out, so we were staying Riverhead east, mostly the North Fork,” Vinny said. “We’re at farmer’s markets, fairs and festivals on the North Fork, and often we sell out.”

Greenport Jerky is not, in fact, made on the North Fork, something that would require a much larger investment in a USDA-approved facility. After selecting prime USDA beef brisket, the company trims off the fat and hand slices each piece of meat, which is then marinated for 24 hours to create a variety of flavors, including original, black pepper and sea salt and IPA Beer, which, according to the website “combines the flavor every beer swilling jerky lover enjoys.” There are spicy jerkies marinated in jalapeno and habanero peppers and sweeter versions like orange teriyaki. One fan favorite is “The Real Western.”

“It’s like a really nice filet mignon steak that is salt and peppered just right,” said Vinny, who hopes to start using more local ingredients such as sea salt and wine as the company continues to grow.

No MSG or nitrates are added to Greenport Jerky, which is dehydrated for to to four hours depending on the cut.
