In 1839, Alexander Matheson found himself searching for the perfect distillery location, but his criteria were not the same as others.
Some had already chosen to build their distilleries in the Scottish Speyside Valley, due to its established transport links and more hospitable climate. But Matheson was not swayed by creature comforts. His only concern was where he could find the best natural resources to make the finest whisky.
So he settled on an isolated area on the banks of the Cromarty Firth, laid bare to the harsh winds of the North Sea. On this wild land Matheson started from scratch, building everything from warehouses to railways, forging his own path and establishing The Dalmore’s own unique character and taste.
On Tuesday night, Townline BBQ — located at 3593 Townline Road in Sagaponack — will pair its classic barbecue fare with feature selections from The Dalmore Principal Collection and a specially rolled signature cigar from Manhattan’s Soho Cigar Bar during “BBQ, Scotch and Cigars,” beginning at 6 p.m.
Barbecue popcorn, peanuts in the shell and venison jerky will be available upon arrival, followed by Stationary Snacks and a 15-year Dalmore Scotch Single Malt Old Fashioned; a wing bar of TL Original Hot, Chipotle Honey and Dry Rub, with blue cheese dressing and house-made ranch; riblets; fried mac and cheese cups; and pulled pork, chopped brisket, and pulled chicken sliders.
Dinner will include a whole smoked pig with baked beans, paired with The Dalmore Scotch Single Malt 18 Year, and house-made Kielbasa and Venison Sausage with Housemade Sauerkraut and German Potato Salad with The Dalmore Scotch Single Malt 12 Year — rounded out by caramel corn with smoked almonds, paired with The Dalmore Scotch Single Malt and a signature cigar.
